Basic Rub

4-5 pounds spareribs (whole, trimmed and membrane removed)
1/2 cup bourbon
1 cup beer (preferable ale)
1/2 cup brown sugar
1/2 cup chili sauce
1/3 cup soy sauce
2 cloves garlic (crushed)
1 teaspoon black pepper

Combine all the suace ingredients in a small saucepan until brown sugar is dissolved.

Remove suace from heat and allow to cool for 10-15 minutes.

Remove membrane from back of ribs and any extra fat. Place ribs in a large dish.

Cover ribs with half of sauce and allow to marinte in refrigerator for 5-6 hours.

Reserve other half of sauce for later.

Preheat grill for medium heat.

Remove ribs from dish, reserve marinade.

Place ribs on the grill and allow them to cook for 20 minutes, turning once.

Cover ribs loosely with foil and cook for an additional hour and a half.

Once ribs reach internal temparature of 165F, remove from heat, placing on a cutting board and let ribs rest for 5-10 minutes.

Carefully open foil packaging and discard.

Heat reserved sauce, brush over ribs and serve.
