Shallot Mashed Potatoes4T butter
1lb. Yukon Gold potatoes
2T sour cream
1 shallot
Cut, boil and mash potatoes
Lightly caramelize sliced shallots in butter
Mix shallots with butter from the pan and sour cream into potatoes
Hand mash until slightly lumpy
