Chicken Salad with Craisins

Makes 4 servings

2 1/2 cups cooked, chopped chicken
3 stalks chopped celery
1 cup chopped apple
1/4 cup dried cranberries
1/2 cup plain, nonfat Greek yogurt
2 Tbsp mayonaise
2 tsp lemon juice
2 tsp chopped parsely
salt
pepper

Place chicken, celery, apple and cranberries in a bowl and stir to combine.

In a small bowl, stir together yogurt, mayonnaise and lemon juice.

Add to the chicken mixtgure and stir to mix well.

Stir in the parsely.

Season to taste with salt and pepper.

Serve on halved croissants or on lettuce bed.
