Coulis - Uncooked Fruit Purée
Ingredients
4 cups fresh berries, or 2 cups diced fresh fruit
2 tablespoons sugar or more to taste
1 teaspoon fresh lemon juice
Procedure
Purée the berries or fruit in a blender or food processor. Strain
the purée through a fine-meshed sieve. Stir in the sugar and lemon
juice. Adjust the amount of sugar if necessary. Cover and refrigerate until
needed. This purée may be used as an ingredient in another recipe,
or by itself as a sauce.
Yield: Makes about 2 cups
